What is Dabeli?

Pav slit and stuffed with magic and cooked to make one of the most delectable Indian snacks is dabeli. One bite of it into your mouth and your mouth bursts with flavors. Okay it is something spicy, no it is tangy, and there is some sweetness too, what was that? That crunchy thing!! This will be your reaction when someone blindfolds you and makes you eat dabeli.

Dabeli is one of the best Indian snacks and this is the best recipe for it. Something so good calls for little preparation. Dabeli gets its heat from a few Indian spices which combine to make dabeli masala. It gets its bite from the roasted masala peanuts. A couple of chutney recipes are an integral part of dabeli recipe.

Dabeli can jazz up your tea time and if you love it the way I do, it can be a dinner recipe or lunch recipe too.

Let’s talk about the ingredients for Dabeli Recipe:

Dabeli is a combination of a few recipes. It is a potato recipe as boiled potatoes form the base of the stuffing, the divine stuffing. Let’s have a look at the required ingredients:

Pav: Ladi pav is what I used for my dabeli. These were not very thick so stuffing them was easier.

Boiled potatoes: Boiled and mashed potatoes are combined with a couple of more ingredients to make the most delicious stuffing. The interesting part is that the regular Indian spices such as red chili powder, turmeric powder, etc are not added in the potato stuffing.

Dabeli masala: A handful of Indian spices are combined and they make the dabeli so flavorful and peppery.

Tamarind Date Chutney: No, this is not applied to the pav. It is added to the potato stuffing.

Roasted masala Peanuts: This is not optional. Not at all! Peanuts are mandatory for the dabeli recipe. You can use the readymade ones but these are just too perfect for the dabeli recipe.

Other ingredients: Few fresh ingredients such as coriander, onions, and pomegranate are used for the recipe. Red garlic chutney adds a nice flavor. And the final look is achieved with the help of nylon sev.

1.This recipe makes 18 dabeli.

2.Heat a cooking pan. Add 2 tbsp oil.

3.Add in 5 boiled and mashed potatoes.

4.Next goes in 3 tbsp dabeli masala and ½ cup tamarind date chutney.

5.Add in salt to taste.

6.Cook for 4-5 minutes on low flame.

7.Check and adjust the seasoning.

8.Transfer the stuffing to a plate and let it cool down. Top it with ¼ cup of pomegranate (anaar) seeds, ¼ cup chopped onions and a handful of chopped coriander leaves.

9.To make dabeli, slit a pav from the center. Apply red garlic chutney on both the sides.

10.Spread little stuffing on it. Next goes a layer of roasted masala peanuts.

11.Another thin layer of stuffing.

12.Pack the pav and put nylon sev on the sides.

13.Heat little butter on a skillet.

14.Roast the dabeli till crisp.
