What is Masala Pav?

Pav with a lip-smacking stuffing having the kick of garlic, the crunch of salted boondi and divine taste of vada pav chutney is pav sandwich/masala pav, as you may call them. This is basically a recipe that I like to follow for my leftover pavs, especially when I feel like having vada pav and don’t have the time to make it. This masala pav recipe will take you close to vada pao. With a few things ready pav sandwich or masala pav can be fixed in no time

Let’s talk about the ingredients for Pav Sandwich Recipe

I always have few purees and paste in my freezer and a few types of chutneys in my fridge. For this pav sandwich recipe, these come really handy. I have used chopped garlic, ginger chilli paste and the star of the recipe vada pav chutney. Of course, boiled potatoes form the base of this pav sandwich recipe. To add a bite I have used salted boondi. Further for some fresh flavour, coriander chutney has been added.

How to make Masala Pav

1. To make vada pav chutney, dry roast 6 dry whole red chillies, 12 unpeeled garlic cloves, and 1 cup desiccated coconut SEPARATELY, till aromatic. Let it cool down. Transfer to grinder jar.

2. Grind to a coarse powder.

3. To make the stuffing, heat 1 and ½ tbsp oil. Add 1 tsp mustard seeds (raie) and let them crackle.

4. In goes 2 tsp chopped garlic. Cook for 1 minute till the raw smell goes.

5. Add 3 large boiled and mashed potatoes, salt to taste and ¼ tsp turmeric powder. Mix well and cook for 5-7 minutes.

6. Time to add 1 tbsp ginger chilli paste. Cook for 1-2 minutes. Let the stuffing cool down.

7. Finally to make pav sandwich, cut a pav from the centre, apply vada pav chutney and green chutney, 1 tsp each or as much required.

8. Spread stuffing of pav sandwich.

9. Add salted boondi.

10. Heat a skillet and add little butter. Roast pav sandwich on low flame for 2-3 minutes.
