What is Spinach Corn Sandwich?

Sandwich with a delectable stuffing of spinach and sweet corn kernels combined together with some white sauce is spinach corn sandwich. It has the sweetness of the white sauce and sweet corn kernels, which delectably cut the sharpness of spinach. It is the kind of sandwich available at the cafes and restaurants. This is a great way to make your kids eat spinach. The sandwich is absolutely delish and is sure to be loved by the kids. Needless to mention adults too will love it.

Let’s talk about the ingredients for Spinach Corn Sandwich:

Spinach: Chopped spinach is used for the recipe. Make sure to use good quality spinach. Smaller leaves taste better.

Sweet Corn: I have used the frozen sweet corn kernels easily available at the grocers as well as online. Do not thaw them. Just add to boiling water and boil for 2-3 minutes. You can also use the sweet corn cob. Just pressure cook it and separate the kernels.

White Sauce: Exactly white sauce is not prepared but all the ingredients used to make white sauce have been used giving the stuffing a nice flavor and binding. Flavoring too has been as that of the white sauce, simply with salt, sugar and white pepper. You can use black pepper instead of white pepper. You can also use red chili flakes, Italian seasoning, and CHEESE!

1.This recipe makes 3 sandwiches.

2.Heat 1 tbsp butter and sauté 1 chopped garlic clove till golden.

3.Next goes in 1 cup chopped spinach leaves.

4.Cook for a couple of minutes.

5.½ cup boiled sweet corn kernels go in next.Cook for a minute.

6.Sprinkle 2 tsp all-purpose flour (maida). Cook for 1-2 minutes.

7.Next goes in ½ cup of chilled milk. Cook till the mixture thickens and has a spread-like consistency.

8.Season it with little salt, ½ tsp of sugar and ¼ tsp white pepper powder.

9.Mix everything well. Taste and adjust the seasoning if required.

10.Let the mixture cool down.

11.To prepare a sandwich take 2 bread slices. Apply butter on them.

12.Spread a thick layer of prepared stuffing. Cover with another buttered slice to make a sandwich.

13.Cut into two. You can also cut it diagonally. I prefer to cut the sandwich at this stage as after grilling it is too hot to handle and at times the cut is messy.

14.Grill it in an electric griller or griller pan. Instead you can also cook it in a pan.
