Poori is deep-fried flatbread prepared using whole wheat flour. Generally, it is lightly seasoned with salt and flavored with carom seeds, etc. However, during summers when mangoes are available in abundance, I like to try different recipes using the same. And lately, I tried making aam poori. Aamras i.e. thick mango juice or mango puree and poori are a great and a very popular combination in itself. I tried to combine these two to make the aam poori. Aam poori, as the name suggests, has the flavor of aam or mangoes. Mango pooris are pleasantly sweet with the very complimentary taste of saffron. These can be served with jeera aloo or simple raita.
Mangoes: I have used the pulp of badaam aam to make the aam poori. You can use any variety of mangoes available.
Flour: Only whole wheat flour is used to make the mango poori.
Seasoning and flavoring: The aam poori is lightly seasoned with some salt and sweetened with a little sugar. These have been flavored with a little saffron. Saffron, really compliments the flavor of the mango poori. You can also add in cardamom or nutmeg or any other spices of your choice.
Oil: Oil for frying!
