What is Ragda Pattice?

Ragda is a simple yet tangy white peas preparation served with pattice which is a cutlet made of boiled potatoes. Ragda patties is garnished with chopped onions and coriander etc for a nice bite. Let’s talk about the Ingredients for Ragda Pattice

Ragda Pattice has two components, Ragda and Pattice

Ragda: is prepared with dried white peas which are easily available at the grocery stores. It is a very simple preparation where in the peas are boiled and later simmered with some spices. However, it is important to soak them well before use.
Pattice: Ragda is served with aloo pattice, which are made using boiled potatoes and to provide it some firmness flattened rice (poha) is added.
Garnishing: Ragda pattice doesn’t call for too much cooking or ingredients. However the garnishing should be perfect and it includes chutneys, onions, spices etc.

How To Make Ragda Pattice

1. Take 6 boiled potatoes, 3/4 cup soaked Poha, salt as per taste, and 1/4 tsp turmeric powder mix well and make a dough. Divide dough into small pieces and make patties

2. Heat a pan/skillet and add 1 tsp oil

3. Add patties on the hot pan

4. Flip once cooked and cook from the other side too till golden brown

5. Pattice is ready

6. Add 1 cup soaked ragda, 3 cups water, 1 pinch turmeric powder, salt to taste and 1 pinch baking soda. Pressure cook for 3-4 whistles on low flame after 1 whistle on high flame

7. Let the pressure release and check ragda. It should be soft and mushy

8. Add 1 and 1/2 tsp red chili powder, 1 tsp roasted cumin seeds powder, 1 tsp coriander powder, 1/4 tsp turmeric powder, and 1/2 tsp black salt

9. Simmer for 5 minutes

10. Add 2-3 tbsp tamarind pulp (imli) chutney and mix well

11. Ragda is ready

12. Take a serving plate and put two patties

13. Add ragda on patties

14. Sprinkle 2 tsp green chutney

15. Add 4 tsp tamarind chutney

16. Add chopped onion and coriander. Sprinkle red chili powder and roasted cumin seeds powder

17. Bon Appetit Serve immediately
