There are different kinds of vermicelli available in the market. I always make sure to get the ones made up of semolina. You are however free to get any of your choice.

There is a very popular Sindhi breakfast consisting of methi sevaiyaan (sweet vermicelli) and aloo tuk i.e. deep fried potato cubes. I used to have it often at my friend’s place.
One day my mother asked me if I’d like to have sevaiyaan (vermicelli). I thought she is talking about sweet sevaiyaan (vermicelli) and aloo tuk. I said a very prompt yes!
Well I was served the vermicelli pulao. Certainly I was disappointed. I love the methi sevaiyaan and aloo tuk combination so much that I don’t mind those tons of calories.
But that day my mother had been kind enough to ask me before preparing the dish, so it was settled that I was eating that Vermicelli Pulao. You know we weren’t privileged to accept or reject any dish that was prepared. I used to think it to be very unfair. However ever since I have become a mother I am carrying forward my mother’s legacies. You know what I mean!! Even my kids don’t have a choice when it comes to food. Because I want them to have a balanced diet and in balanced diet there is a little room for choices.
Anyways coming back to the Vermicelli Pulao, it won my heart after its very first bite and has been on my breakfast menu since that day.
If mother was not strict enough and I was allowed to reject the Vermicelli Pulao that day, you people would have missed this post!
However on a serious note, kids shouldn’t wait to be parents to understand their parents. They should understand them since they learn to understand.
VERMICELLI PULAO RECIPE
Prep Time 10 Minutes
Cook Time 15 Minutes
Servings 4 Persons
INGREDIENTS FOR VERMICELLI PULAO
- 1 tbsp oil
- 1 tsp raie
- Handful of curry leaves
- 1 tbsp chana dal
- 1/2 cup chopped onion
- 1 green chilli slit
- 1/2 cup chopped potato
- 1/2 cup Green Peas
- 1/2 cup chopped Carrot
- 1 cup tomato pulp
- Salt to taste
- 1 tsp red chilli powder
- 1/4 tsp turmeric powder
- 2 cup water
- 1 cup vermicelli
- Juice of 1 lemon
- Handful of coriander for garnishing
HOW TO MAKE VERMICELLI / SEVAI PULAO
Roast vermicelli till golden brown.
In a pan heat 2 tbsp oil.
Add 1 tsp raie. Let it crackle.
Add few curry leaves. (I had curry leaves powder, so I added that)
Add 1 tbsp chana dal and let it cook till golden.
Add 1/2 cup chopped onion and 1 slit green chilli .
Cook the onions till they turn pinkish.
Add 1 cup tomato pulp.
Cook till the oil oozes.
Add 1/2 cup chopped potato.
Add 1/2 cup green peas.
Add 1/2 cup chopped carrot. Cook the vegetable for a couple of minutes.
Add 2 cup water.
Add salt to taste.
Add 1 tsp red chilli powder.
Add 1/4 tsp turmeric powder.
Let it boil.
Add the roasted vermicelli.
Cover the lid and let it simmer for 10 minutes or till cooked.
Garnish with handful of coriander and juice of 1 lemon.
Serve it for breakfast/as snacks.
I often give to Amy in her tiffin.
There should be a calorie refund for things that didn’t taste as good as you expected.
