Along with vegetables, cheese is also used. Cheese, processed and spread, both have been used. The soft paratha followed by crunchy vegetables gives a mix of textures in the mouth. This veg roll recipe is absolutely healthy and very wholesome. Further, the veg roll recipe is absolutely customizable. You can add the veggies of your choice and omit the ones you don’t like or have. Vegetable rolls are great for tiffin, lunch box, picnics, etc. Veggie roll is liked a lot by the kids and is a great way to add vegetables in their diet.

Chapati/Paratha: My favorite Indian bread for any roll recipe is plain paratha made with whole wheat flour. It is soft, rolls easily and is obviously is a healthy option as compared to the maida rotis.

Vegetables: I have used the most basic vegetables that are used for noodle recipes i.e. cabbage, capsicum, and carrots. In the pictures, the carrot is not seen as when I shot the pictures for this post carrot wasn’t available. Lettuce has also been used. Other than this, onion and garlic have been used. You can use spring onions, mushrooms, etc.

Seasoning and flavoring: Salt along with black pepper has been used to season the filling of the vegetable roll. Tomato ketchup has been used to balance the flavors.

1.This recipe makes 4 vegetable rolls.

2.Heat 1 tbsp of oil. Add 1 tbsp garlic and cook it for 30 seconds on high flame.

3.Next add in 2 sliced onions. Cook for 1 minute on high flame, stirring continuously.

4.Next add 1 sliced capsicum. Cook for 2 minutes on high flame, stirring continuously.

5.Next add in 2 cups of shredded cabbage. Cook on high flame for 5-6 minutes, till the veggies soften but a bite remains.

6.Next add in salt to taste and 1 tsp of black pepper powder.

7.Also add 2 tbsp of tomato ketch up. Cook for a minute.

8.Take out the mixture in a plate and let it cool down.

9.Once it cools, add ¼ cup grated processed cheese. Mix well and keep aside. Check and adjust the seasoning.

10.To make vegetable roll, on the paratha apply cheese spread and tomato ketch up.

11.Next, place a lettuce leaf.

12.Put enough stuffing.

13.Roll it and secure with a toothpick.
