What are poha rolls?

Poha rolls are crispy and tasty cylindrical rolls made using poha i.e. flattened rice and boiled potatoes. Crispy poha rolls have the bite of onions and kick of chaat masala, along with the freshness of green coriander and heat of green chillies. Poha rolls can be served for breakfast or along with evening tea. This is an easy Indian snack recipe which can be prepared as appetizers too. These should be served hot.

To bind poha rolls I have added boiled potatoes which not only give good texture to poha rolls but also add taste. For flavouring I have used chaat masala. I use homemade chaat masala as it gives perfect kick to my recipes. The texture of mixture is critical for poha rolls recipe. It should be smooth yet firm. It is important to wash and soak poha properly, at the same time it is important that the water is properly drained out.

How to make Poha Rolls

1. Wash poha properly under running water. Keep it soaked for 2 minutes. Squeeze out the excess water.

2. Spread soaked poha on a plate and leave it for a minute.

3. In a mixing bowl add 2 boiled and grated potatoes.

4. Time for greens, add in chopped coriander leaves and 1 chopped green chilli.

5. Now add in soaked poha.

6. It’s time to add spices, 1 tsp red chilli powder, 2 tsp chaat masala powder and salt to taste. (Note: Chaat masala has salt in it, so be careful while adding in salt).

7. Add 1 chopped onion.

8. Mix everything well. The mixture should be smooth. (If the mixture is too dry add in more boiled and grated potatoes. If the mixture is too soft add in some rice flour or powdered poha). Take a portion of the mixture. Give it a cylindrical shape. Shape all poha rolls.

9. Heat enough oil.

10. Add poha rolls and fry on medium heat till brown.
