Soft and spongy, instant Dhokla prepared in a mug making it utterly cute and convenient, is mug Dhokla. Instant dhokla is basically a Gujarati snack prepared by steaming gram flour batter and finishing it with a flavorful tempering of mustard seeds, curry leaves etc. The ingredients remain the same for mug dhokla recipe too, however, the mode of cooking and presentation differs, as it is prepared in a microwave and as mentioned earlier and as the name suggests, in a mug. Mug dhokla is a way whereby kids who are not fond of dhokla too will relish it. It can also be served for high tea or kitty party.
Gram Flour (besan): Regular gram flour has been used. It is important to sieve it.
Yogurt (dahi): We don’t need sour curd for mug dhokla recipe. Just make sure to use well-whisked curd.
For tempering: This is the most important part of the recipe. Tempering is critical for any recipe but in this recipe, it is more important because when the dhokla is cooked in the microwave, a little over-cooking and it gets a bit dry. Tempering has water and therefore revives the dhokla properly. Of course, tempering has other ingredients too, i.e. mustard seeds, green chillies, curry leaves, and since water is added, sugar and lemon juice are also added to give an awesome kick to the mug dhokla.

This chap is totally independent. It doesn’t need any sauce or chutney. Of course, a cup of adrak wali chai can be served anytime.
1.This recipe serves 2 persons. The number of mug dhokla depends on the size of mug used. 1 got 3 mug dhoklas prepared in my coffee mug.
2.Sieve 1 cup gram flour (besan) in a mixing bowl.
3.Add in ½ cup yogurt, a pinch of turmeric powder, 1 tsp grated ginger, 2 tsp powdered sugar, and salt to taste.
4.Add water gradually and make a lump free mixture.
5.The mixture should be as a cake batter. Not too thick not too thin.
6.Add 1tsp fruit salt, on this add 2 tsp water. Water will activate the fruit salt.
7.Mix it well in just one direction.
8.Pour in a microwave safe mug. Tap it well. Keep 2-inch space on the top for the dhokla to rise. In the picture the mug has been over filled. The dhokla over flowed. However, in the other mugs I left appropriate space.
9.Put in a microwave on high power for 2 minutes. Check by inserting a toothpick. If there is batter on the toothpick microwave for 30 seconds more. Do not overcook.
10.Prepare the tempering. For that heat 1 tsp oil. Add ½ tsp mustard seed and let it splutter.
11.Add in a handful of curry leaves and a slit green chili.
12.Next goes ½ cup water and 1 tbsp sugar.
13.For the zing, juice of 1 lemon.
14.Pour on the mug dhokla. The quantity of water required depends on the size of your mug dhokla and how moist you like your dhokla.
15.Serve as and when required. Bon appetit!
