GATTA PULAO RECIPE

Rice and gatte combined in the best possible way. Rice flavored with whole spices, fried onions, ghee, fresh coriander, ginger, garlic etc. Gatte ka pulao ecipe is flavorsome rice combined with gatte(gram flour dumpling) which are shallow fried. So basically awesome flavored rice combined with gatte. It makes for a complete meal. Just team it up with masala curd and salad.
It is a typical Rajasthani preparation. So whenever you are in a mood to go regional, you know what you can make. It is a rich preparation. It can be included in your party menu special dinner menu.

How To Make For Gatta Pulao

1. To make gatte, in a large bowl add 1/2 cup gram flour, salt to taste, 1/4 tsp red chilli powder, 1/4 tsp fennel seeds, 1/4 tsp coriander seeds and a pinch of soda

2. Add 1 tbsp oil

3. Mix everything

4. Use 1 tbsp curd to make a semi-soft dough

5. Let the dough rest for 10 minutes

6. After 10 minutes, re-punch the dough

7. Make logs

8. Add the logs to boiling water

9. Let the log boil till the float on the surface. This will take 7-8 minutes

10. Once the logs have boiled, take them out and let them cool a bit

11. Cut into roundels

12. Shallow fry gatte till golden brown

13. Heat 2 tbsp ghee

14. Add 1/2 tsp cumin seeds. Let it crackle

15. Add 1 bay leaf and 1 whole red chili

16. Add whole spices i.e. 1 black cardamom, 2 green cardamoms, 4 peppercorns, 2 cloves and 1 piece of cinnamon. Cook till aromatic

17. Add 1 medium onion grated

18. Cook till it turns brown

19. Add 2 tsp ginger garlic paste. Cook till raw smell goes away

20. Add 1/2 tsp red chili powder and 1/4 tsp turmeric powder

21. Add 2 cups cooked rice

22. Add gatte

23. Add 1/2 cup fried onions

24. Add a handful of chopped coriander and1 tsp ghee

25. Mix everything

26. Sprinkle 2 tbsp water

27. Cover and place some weight and cook the rice for 5-7 minutes
