Ingredients for Masala Khichdi Recipe

Khichdi: I have prepared khichdi with rice and moong dal. You can use any khichdi recipe for making masala khichdi. Further, you can also make masala khichdi with any leftover khichdi that you have. Also, you can change the consistency of khichdi as per your liking.

Onion, tomatoes, and ginger garlic paste, chilies: The tempering is prepared with the base of onions and tomatoes. The same is further flavored with ginger garlic paste and spiced with some green chilies.

Spices: The very basic spice used for tempering, i.e. cumin seeds (jeera) has been used! Other than this, red chili powder has been used. A number of whole spices have also been used such as a bay leaf, cloves, black peppercorns, etc.

Ghee: The tempering should be prepared in ghee for the maximum flavor.

Garnishing: The masala khichdi has been garnished with fresh coriander leaves and finished off with some lemon juice.

2.Make moong dal khichdi according to the recipe given in the link mentioned in the ingredients section.

3.To make the tempering heat 2 tbsp ghee.

4.Add 1 bay leaf (tej patta), 2 cloves (laung), 4 black pepper corns (sabut kali mirchi) and cook for a few seconds.

5.Add 1 tsp of cumin seeds (jeera), let it splutter. Add a big pinch of asafetida (heeng). Cook for a few seconds.

6.Add in a chopped onion.

7.Cook till it is translucent.

8.Add in 1 pureed tomato.

9.Cook till the oil oozes.

10.Add 1 tsp of ginger garlic paste and 1 chopped green chili.

11.Add in ½ tsp of red chili powder.

12.Cook for a minute.

13.Add the prepared tempering to the cooked khichdi.

14.Mix well. Garnish with fresh coriander leaves and finish off with lemon juice.
