What is Mexican Rice?

A rice dish prepared using tomatoes, flavored with onions and garlic is Mexican rice. The interesting part about the Mexican rice recipe is that rice is sautéed till golden in color. And it brings so much difference in the flavor of the dish. It is also known as red rice or Spanish rice. Red rice, because it is red in color because of the use of tomatoes in the form of paste or sauce etc. And although it is also known as Spanish rice, Wikipedia just told me that it is not very popular in Spain. Along with this, few vegetables are also added such as peas, corn, carrots, etc. Pea and carrots are said to be common veggies for the Mexican rice recipe. Rice dishes are such comfort food. These can be served for weekday dinner.

Rice dishes are the family’s favorite. Especially one-pot dishes like these are so easy to make and so delish to enjoy. Rice and tomatoes make a great combination. A very popular rice recipe from the South Indian cuisine is the tomato rice. This preparation also bursts with flavors but both these rice preparations are so different from each other. Let’s have a look at the ingredients required for Mexican rice recipe:

Rice: Aromatic basmati rice has been used for the rice recipe. The catch is to sauté the rice in little oil. This step is critical and should be followed as stated in the recipe. Rice is not soaked for this recipe.

Tomatoes: Tomatoes are an integral part of the Mexican rice recipe. Generally, the Mexican rice recipes use tomato sauce (store-bought) or tomato bouillon. In this recipe, tomatoes have been roasted and the skin has been peeled off. Thereafter it is pureed coarsely and used for this rice dish.

Onion and garlic: Tomato is the main flavoring agent. Little onion and garlic is added which just adds its hint without overpowering the dish.

Vegetables: Well, not all Mexican rice recipes use vegetables. However a few do use! And I like to add vegetables for extra nutrition and appeal.

Spices: Red chili powder and roasted cumin seeds powder are the spices used.

How to serve Mexican Rice?

How to make Mexican Rice?

1.This recipe serves 2-3 persons.

2.In a cooking pan heat 1 tbsp of oil. Add ¾ cup of rice.

3.Sauté on low flame till golden in color.

4.Add 3 roasted and pureed tomatoes, 1 chopped onion, 2 minced garlic cloves, and 1 tsp red chili powder, ½ tsp cumin seeds (jeera) powder, and salt to taste.

5.Add 1.5 cups of water.

6.Cover and let it cook on low flame for 10-12 minutes or til the rice is cooked.

7.Add 1 and ½ tsp tomato ketch up.

8.Next add ½ cup boiled corn, peas and carrot. I had added little red chili powder while boiling.

9.Mix well. Cook for 2 more minutes.

10.Serve hot. Bon appétit!
