What is Ghee Rice?

Ghee Rice Recipe – A rice preparation (as the name suggests) from South India, which calls for a few ingredients such as whole spices, nuts and dry fruits, chilies and birista (fried onions) and of course ghee, is ghee rice. As such ghee rice recipe is very easy simple and but when served it looks elaborate and absolutely aromatic. It can be served with any dal or gravy of your choice. Ingredients for Ghee Rice Recipe

Rice: I prefer to use delightful basmati rice for ghee rice recipes. You can use the other variety of rice. Use the non-sticky variety of rice, so that the grains remain separated after cooking. Aged basmati rice will make better ghee rice.

Ghee: Ghee is the most important flavoring agent in the ghee rice recipe. Use the best quality ghee to make healthy and flavorsome ghee rice.

Spices: I have used bay leaf, mace, star anise, cinnamon and cloves to flavor ghee rice. You can also use cardamom (green/black or both), peppers etc.

Dry fruits and nuts: Cashew nuts and raisins are used in the ghee rice recipe.

Other ingredients: Green chilies, birista (fried rice) are also used along with water and salt to taste.

How to make the Best Ghee Rice?

Ghee rice should have every grain of rice separated. It should be properly flavored. The following points should be kept in mind to make the best ghee rice recipe.

  1. Use good quality of rice and ghee.
  2. Rice should be cooked in ghee and spices for a couple of minutes. This is a critical step and should not be missed.
  3. Do not overdo any of the flavoring ingredients.
  4. Cook the rice properly. It should not get mushy.

What to serve with Ghee Rice?

Ghee rice can be served with korma, gravy or dal of your choice.

1.This recipe serves 4-6 persons.

2.In a pan, heat 2 tbsp of ghee.

3.Add in 8 cashews (kaju) and 8 raisins (kishmish).

4.Cook for 30 seconds till the raisins puff up.

5.Take out and keep aside for now.

6.In the same ghee add 1 bay leaf (tej patta).

7.Next add in 1 strand of mace (javitri).

8.Also add 1 star anise (chakra phool).

9.Next ½ inch of cinnamon (dal chini) goes in.

10.Add in 3 cloves (laung).

11.Cook the whole spices till aromatic.

12.Add 3 broken green chilies. Cook for a minute.

13.Add in 1 cup soaked rice.

14.Cook for 2-3 minutes, stirring gently.

15.Next goes in salt to taste.

16.Add in 2 cups of water.

17.Cook on high flame for 2 minutes. Thereafter cook on 15-20 minutes on low flame or till the water is totally absorbed and the rice is cooked.

18.Add in ¼ cup of birista (fried rice).

19.Also add the fried cashews and raisins.

20.Mix everything gently.

21.Serve hot. Bon appetite.
