What is Galho?

Rice preparation from the state of Nagaland, packed with vegetables is Galho. It has consistency as that of khichadi. However, no lentils are used to make galho recipe otherwise it would have been very close to vegetable khichadi. As such it is a non-vegetarian dish and also uses fermented soybeans and bamboo shoots, but we are preparing the vegetarian version of galho without any fermented ingredients. It can be served for breakfast or light lunch or dinner.

Let’s talk about the ingredients for Galho recipe:

Rice recipes are crowd-pleasers. Rice is relished in many forms, be it pulao recipes or biryanis or khichadi recipes. And when combined with vegetables what you get is a complete meal. Following is all that you need to make Cabbage Palak Galho:

Rice: Since the dish has the consistency of khichadi, I have used the khichadi rice for this recipe. You can also use Basmati rice.

Vegetables: I have added cabbage and spinach. You can use any leafy vegetable of your choice. Further, you can add vegetables such as beans, carrots, etc. Further to flavor the galho I have sued tomato, ginger, and green chili. You can also use garlic.

How to make Galho?

1.This recipe serves 3-4 persons.

2.In a pressure cooker add all the ingredients, 1 cup rice, 1 cup chopped cabbage, 1 cup spinach leaves, 1-inch ginger grated, 1 chopped green chili, salt to taste, and 1 chopped tomato. I have used pressure cooker to make galho. You can also cook it in a pan.

3.Add 2 and ½ cups of water. Close the pressure cook and keep the flame high till the first whistle. Thereafter reduce the flame and cook on low flame for 5-7 minutes. Let the pressure release. Open the cooker.

4.Rice should be mushy.
