The wooden skewers are called seekh and therefore it is so-called. Veg seekh kabab are great party appetizers.

Kabab is easy and healthy. These call for main ingredients along with spices and fresh ingredients such as garlic, ginger, chilies and fresh herbs coriander and mint. Veg seekh kabab is interesting because of the way these are cooked and presented. Generally, seekh kabab is a non-vegetarian preparation, however, this the vegetarian take on it. Vegetables: Assorted vegetable is required to make this kabab recipe. Cabbage, carrot, and peas are the main and popular vegetables used for veg kabab recipe. I did not have peas and therefore did not add those. Further, you can also add corn, mushroom, cauliflower, etc.

Potatoes: Boiled potatoes have been used to bind the ingredients together.

Roasted Gram Flour: Indispensable for most of the kabab recipes is roasted gram flour. It gives the body to the mixture. Other than this bread crumbs are also added to give dough consistency to the mixture.

Ginger, garlic, chili: Fresh paste of these ingredients adds a lot of flavor to the kababs and cannot be skipped.

Spices: Spices such as roasted cumin seeds powder, dry mango powder, red chili powder, garam masala powder add a lot of zing to the kabab.

How to serve Veg Seekh Kabab

How to make Veg Seekh Kabab

1.This recipe makes 6 kababs.

2.Heat a pan. Add 2 tbsp gram flour (besan). Roast on low flame till the raw smell goes. Do not let the color change.

3.Heat 2 tsp oil. Add ½ cup chopped onions. Cook till onions become soft.

4.Add 1 tsp each ginger, garlic and green chili paste. Cook for a minute.

5.Add chopped vegetables i.e. 1 cup chopped carrot and 1cup chopped cabbage

6.Next add in little salt. Cover the pan and cook till the vegetables become soft.

7.Thereafter let the mixture cool down. Add handful of coriander and mint leaves. Thereafter transfer to a grinding jar and grind to a coarse mixture.

8.In another mixing bowl add 2 boiled and grated potatoes. Add spices, i.e. 1 tsp coriander powder, 1 tsp red chili powder, ¾ tsp dry mango (amchur) powder, ½ tsp garam masala powder, ½ tsp black pepper (kali mirch) powder, and 1 tsp roasted cumin seeds (jeera) powder.

9.Add juice of ½ lemon.

10.Next add the vegetables mixture and roasted gram flour.

11.Mix everything well.

12.Add 3-4 tbsp of bread crumbs.

13.Mix and it should have dough like consistency. Check and adjust the seasoning nad consistency.

14.Shape the kababs on wooden skewers. Place in a pre-heated griller. You can also make it regular pan too.

15.Cook till brown from all the sides.

16.Serve hot. Bon appétit!
