Tomatoes: In India, I have seen 2 varieties of tomatoes. The desi tomatoes, which are round and tangier and the salad tomatoes, which are tall, less tangy and are preferred for soups, etc. For this recipe, we need the latter. The tomatoes should be firm.

Stuffing Ingredients: In this recipe, a potato and paneer stuffing has been used! No onion garlic has been added. Boiled potatoes have been cooked with few spices and paneer is added to make the stuffing.

Cheese: The stuffed tomatoes have been garnished with grated cheese and baked.

1.This recipe serves 6 persons.

2.Cut off the top of the tomato and scoop out the seeds. Discard these.

3.Heat a pan. Add 1 tsp cumin seeds (jeera). Let it splutter. Add 1 cup boiled and mashed potatoes.

4.Further add salt to taste, 1 tsp red chilli powder, 1 tsp coriander powder and ¼ tsp turmeric powder.

5.Cook for a couple of minutes. Thereafter add in ½ cup crumbled paneer.

6.Transfer the mixture in a bowl. Add 2 tbsp of grated cheese and 2 tbsp tomato ketchup. Mix well.

7.Fill the mixture in hollow tomatoes.

8.Top with grated cheese. Transfer the tomatoes to a bake dish. Bake at 180 degrees for 2-3 minutes.
