What is Zucchini Roll?

Generally speaking, zucchini rolls are prepared using cream cheese or ricotta cheese or as zucchini lasagna rolls. However, this is a distinct recipe and is more of a salad recipe. Crunchy, mildly sweet, absolutely flavorsome coleslaw salad rolled in fresh and crisp, thinly sliced zucchini, makes an interesting and innovative salad recipe, called zucchini rolls. These are just so perfect for parties can be served as a salad or as an appetizer. The best part is that with some coleslaw handy, these rolls can be fixed in 5 minutes or so. Further, these can be served as a side dish with burgers or hot sandwiches, etc.

Salad is such an important part of any meal. If completes the lunch or dinner. And at times when I am not hungry enough to take a full meal, I love to indulge in a bowl of a good salad. It is refreshingly filling. Few salads are definitely more than salads, such as the one I am discussing here. Let’s have a look at the ingredients required to make the zucchini rolls recipe:

Zucchini: You can pick any zucchini roll, green or yellow. I have thinly sliced these using my peeler. It is pretty simple to do so. Further, no grilling is required.

Coleslaw: This is another salad recipe, which is very popular and liked by all. Coleslaw is all about perfect chopping of the vegetable and perfectly combining it with the other ingredients. The coleslaw used for this recipe is the classic coleslaw prepared with a combination of cabbage, carrot and mayonnaise, sugar or honey and vinegar. You can add other vegetables such as onion or bell peppers etc. Further for the flavoring, you can add black pepper powder or white pepper powder, etc.

1.This recipe makes 36-40 zucchini rolls.

2.In a bowl add the ingredients to make the coleslaw salad i.e. ¾ cup each thinly sliced cabbage and shredded carrots, ½ cup mayonnaise, ½ tsp sugar, 1 tsp vinegar and salt to taste and mix.

3.Thinly slice the zucchini.

4.Place ½ a tbsp (approx) coleslaw salad at one end of the thinly slice of zucchini.

5.Roll it. Refrigerate till cold.

6.Serve cold. Bon appetite!
