Let’s talk about the Ingredients for Matar Pulao

Recipe using peas: I have used fresh peas. I have never tried peas pulao with frozen peas, so I am not sure how it would taste.
Other ingredients: This particular recipe is for a spicy and flavoured pulao. I have used whole spices and ginger, garlic and green chillies to flavour the pulao.

How to make Matar Pulao

1. Heat 2 tbsp ghee in a heavy vessel

2. Add 1-inch cinnamon stick, 1 bay leaf, 1 star anise, 2 cloves and 6 black peppercorns

3. Cook till aromatic

4. Add 2 medium sized sliced onions

5. Cook till golden brown

6. Add prepared paste of 1 green chili, 6 garlic cloves and 1 inch ginger

7. Stir and cook for 1 minute

8. Add 1 cup peas

9. Cook for 3-4 minutes

10. Add 2 cups water

11. Cook on high flame till water starts boiling

12. Add salt to taste

13. Add 1 cup rice, 1/2 tsp red chili, 1/4 tsp turmeric powder, 1/2 tsp garam masala

14. Cover and cook on low flame till water is almost absorbed by rice

15. Now cover with lid and put anything heavy weight on the lid

16. Check after 4-5 minutes. The water is over and rice is almost cooked

17. Place a heavy pan or skillet under the vessel. And let it cook for 2 minutes

18. Switch off the gas. Leave the pulao covered for another 5-7 minutes. Thereafter fluff with a fork
