What are Fried Baby Potatoes?

Fried Baby Potatoes are spicy and tangy baby potatoes with the crunchy exterior and soft interior. In this particular recipe, I have neither peeled nor boiled the baby potatoes. I have fried them in sufficient oil so that they get cooked and the skin gets really crunchy.

Baby potatoes are available in the market these days and I get home one pack every time I go vegetable shopping because they look so cute and needless to mention that potatoes are everyone’s favorite. I use baby potatoes to try different dum aalo recipes, starter recipes etc. The only annoying part about baby potatoes is peeling them. That is tiring and time-consuming. And in this recipe, I have not peeled the baby potatoes. I have washed them properly and fried with spices. Make sure you select baby potatoes with thin skin.

Potato lovers should try healthy veggie shots, aalu tukaalu tikki etc.

How To Make Fried Baby Potatoes

1. Prepare tempering : Heat 2 tbsp oil. Add 1 tsp cumin seeds and ¼ tsp asafetida.

2. Add potatoes and salt and cook baby potatoes : Toss in baby potatoes. Sprinkle salt to taste. Cover and cook till the potatoes are soft and cooked.

3. Add spices, water and cook : Add 1 tsp red chilli powder, ¼ tsp turmeric powder, 2 tsp coriander powder and ½ tsp freshly grounded black pepper (kali mirch). Add ¼ cup water. Cover and cook for 3-4 minutes.

4. Add fennel seeds powder and dry mango powder : Add 1 tbsp coarse fennel seeds powder and ¾ tsp dry mango powder. Mix toss everything well.

5. Bon appétit : Serve fried baby potatoes with jeera rice and dal tadka.
