What is Paniyaram?

The most popular Indian recipe for a snack from the state of Tamil Nadu; made with the fermented batter of rice and lentils; flavored with curry leaves, green chilies, ginger; carrying the crunch of onions is Paniyaram. Basically, dosa batter or idli batter recipe works for the Paniyaram recipe. Idli sambar and masala dosa are often prepared using the dosa batter. So whenever I like to take a break, I make Paniyaram. To make appe, there is a dish, the appe dish or appam mold. This appe dish is used. In fact, the appe dish is used to make many other snacks too. I also make aloo bonda and lauki kofta in appe dish. Appe recipe can be converted into a dinner recipe by serving it with sambar and coconut chutney. As such, it is a perfect breakfast recipe.

Let’s talk about the ingredients for Paniyaram Recipe:

I already have rava appe recipe on the blog. Most of the classic South Indian recipes have their rava versions. You name it, rava appe, rava dosa, rava idli and so on. However, this time I thought of going for the authentic appe recipe. So this is all you need to make the Authentic Paniyaram:

Dosa Batter: Idli dosa batter is common for us. I make idli using the idli batter recipe given here. And then I use the same batter to make dosa, uttapam, appe, etc.

Tempering: Tempering of mustard seeds, curry leaves are added to the batter.

Vegetables: Onions, green chili and ginger are used. As such if you wish you can cook them with the tempering and add to the batter, but I like these veggies crunchy. So I add raw.

Rice Flour: This is an optional ingredient. If required, rice flour is added to adjust the consistency of the batter.

How to make Paniyaram?

1.This recipe serves 2-3 persons.

2.Heat 1 tsp oil. Add ½ tsp mustard seeds (raie) and a sprig of curry leaves, torn. Cook till aromatic.

3.In a mixing bowl add 1 cup idli batter. Into this add 1 chopped onion, 1 tsp chopped ginger, 1 chopped green chili, salt to taste and the prepared tempering. Mix.

4.Check the seasoning and consistency. Add rice flour to thicken the batter if required. It should be like the cake batter.

5.Grease the appe dish. Add in a few drops of oil.

6.Pour in the appe batter filing each cavity.

7.Cover and cook on low flame, for 3-4 minutes.

8.Cook till the top is firm and not moist.

9.Flip and cook from the other side too. Do not cover it. Drizzle few drops of oil again for crispier appe.

10.Cook till done.
