What is Lemon Rice?

Rice bursting with flavors of mustard seeds, green chilies, red chilies, ginger, curry leaves and of course lemon. With some leftover rice available, lemon rice can be prepared in no time and with few ingredients. Lemon rice can be served with any gravy or raita/chutney.

Let’s talk about the ingredients for the lemon rice recipe

Lemon rice calls for some leftover rice. It is important that rice is not over-cooked otherwise lemon rice might get mushy. It is best to use refrigerated rice. Simple spices and a handful of fresh ingredients are needed to make this flavorsome lemon rice.

How to make Lemon Rice

1. Heat 1 tbsp oil. Add 1 tsp mustard seeds (raie). Let them crackle

2. Add ½ tsp each urad dal and chana dal. Cook on low flame till dals become golden brown

3. Next goes in 1 slit green chili and 1 tsp ginger paste. Cook for 30 seconds on low flame

4. Further, add 2 broken red chilies and a handful of curry leaves. Cook for 10 seconds

5. To this add ¼ tsp turmeric powder. Cook for 30 seconds. Keep the flame low

6. Add 2 cups cooked rice. I have used salted rice, therefore, I am not adding salt. Otherwise, add at this point

7. Mix well and cook for 4-5 minutes

8. Switch off the flame and finally add 1 tbsp lemon juice. Mix well

9. Check to season. Serve this lemon rice recipe with coconut chutney. Bon appétit!
