Chinese Fried Rice Recipe
Chinese Fried Rice is an aromatic and flavourful combination of rice and crunchy vegetables well seasoned and flavoured with black pepper, vinegar, soya sauce etc.
Chinese cuisine calls for mono sodium glutamate called as ajjinomotto… but since there are mixed opinions about it, I avoid using it. Celery is commonly used in Chinese food. But I couldn’t add it because of its unavailability. Please do NOT mix coriander and celery. They are different. One important thing about Chinese Fried Rice Recipe is the flame… Chinese fried rice should be cooked on high flame for a smoky flavour and crunch of vegetables which is indispensable in this dish. You have choice to add the vegetables you like and omit the ones you don’t. Again don’t mix up ;).
Ingredients for Chinese Fried Rice
- 2 tbsp sesame oil
- 1 tbsp ginger garlic, finely chopped
- 1 onion, chopped
- 1/2 cup capsicum, chopped
- 1/2 cup carrot, chopped
- 2 tbsp sweet corn
- 1/2 cup cabbage, chopped
- 2 tsp vinegar
- 2 tsp soya sauce
- Salt to taste
- 2 cup boiled rice (boiled al-dente)
- 1/2 tsp freshly crushed black pepper
- Handful of chopped spring onions
How to Chinese Fried Rice
1. Cook ginger, garlic and onion
Heat a pan. Add 2 tbsp oil. Once it is hot, add 1 tbsp finely chopped garlic and ginger. Cook for 10-20 seconds. Add 1 small chopped onion. Cook for 30 seconds.
2. Cook vegetables
Add 1/2 cup chopped spring onions, 1/2 cup chopped capsicum, 1/2 cup chopped carrot and 2 tbsp sweet corn. Cook on high flame, tossing occasionally for 4-5 minutes.
Tip: Do not overcook the vegetables. The vegetables should remain crunchy.
3. Cook cabbage
Add 1/2 cup cabbage, cook for 30 seconds.
4. Cook rice
Add 2 cups boiled rice.
Tip: The rice should NOT be overcooked. They should be just cooked.
Tip: Cook the rice well in advance and refrigerate for at least an hour for the best results.
5. Add vinegar and soya sauce
Add 2 tsp vinegar and 2 tsp soya sauce. Give a quick mix.
6. Add seasonings
Add salt to taste, 1/2 tsp sugar and 1/2 tsp freshly crushed black pepper. Mix everything and cook for 2-3 minutes. Check the seasoning. Garnish with chopped spring onions.
7. Bon appétit
Serve fried rice with vegetable machurian.
- You can add garlic or star anise to enhance the flavours.
