If I mention that breakfast is the most important meal of the day, I would sound very repetitive. We all have read it a number of times and now we know it for sure. Still we often skip it. Reason being morning hour is a rush hour and it is very convenient to skip the meal at that busy hour.

It is 1st January 2019 today. This year let’s keep health over convenience. Let’s resolve to start the day at a healthy note with some nutritious breakfast. Viniscookbook would like to contribute in making this resolution successful with a collection of instant breakfast recipes. 10 Quick and Instant Veg Breakfast Recipes

1. Instant Sooji Dhokla :

Instant sooji dhokla had to top the list of instant breakfast recipes because I love to make it and have it. And serve it. Yes whenever I have some guests coming over for instant breakfast recipes or high tea, my family knows that I’ll be preparing instant sooji dhokla. I love to present it as shown in the image below and then cut it as a cake. Then serve it with tangy and spicy green chutney and masala chai.

2. Instant Khaman Dhokla

Instant khaman dhokla is soft and juicy dhokla which has perfect mix of many flavours; it is spicy, tangy, slightly sweet and the best part is that it is a gluten-free instant breakfast recipe. And if you have some left over khaman or you are not in a mood to have instant khaman dhokla as such, you can convert it into khaman chaat or amiri khaman/sev khamani.

My daughter is a big fan of medu vada. But soaking, grinding, yeah even soaking and grinding was fine but shaping the vada used to be a task for me everytime. But then I saw the method expalined in this recipe and instant medu vada became an instant breakfast recipe for me. My daughter loves to have them with coconut chutney, I relish them with onion tomato chutney.

4.Instant Sooji Idli 

These simple instant sooji idli is not only an instant breakfast recipe but can also be prepared for lunch or dinner with sambar and coconut chutney. If making for brunch or tea time, instead of instant sooji idli, stuffed idli can be prepared.

5. Instant Rava Appam

How much do I love appam and appam pan. Reason being this instant breakfast recipe allows so much customisation as per availability and liking. You can add in any vegetables, seasonings, stuffing etc. I love to use my appam pan not only to make appam, but also to make cabbage kofta, lauki kofta curry etc.

Recently I have been trying some recipes with oats otherwise I would never go beyond milk oats, though I believe it is a wonderful instant breakfast recipe for one and all, be it kids or bachelors. However as a part of those experiments I made instant oats idli. It is super light and easy on stomach and full of flavours.

Topped with colourful and crunchy vegetables, instant rava uttapam is a regularly prepared instant breakfast recipe at my home. I love to experiment with the vegetables and seasonings. And at times I am short of vegetables I love to make instant onion uttapam where in caramalized onions give a distinct taste to uttapam.

10. Instant Sooji Toast

One fine day when I was preparing instant rava uttapam, I fall short of the batter and so I combined the batter with some bread slices and made these very delicious instant sooji toast. I love to present them in cute ways for my kids’ tiffin. Likewise I love to make dal toast and besan toast.
