What is Pineapple Preserve?

Pineapple chunks cooked with sugar to increase its shelf life and make it readily available for a number of recipes is pineapple preserve. Good quality and ripened pineapples are not available throughout the year and those who love pineapple crave for it all the time, especially when it is not available. Pineapple preserve is a convenient way of enjoying pineapple whenever you crave for it. It doesn’t call for many ingredients or take a lot of efforts. So whenever you find economical and good pineapples, for instance, these days in the month of September, October (in India) make pineapple preserve and stock it for the future.

Let’s talk about the ingredients for Pineapple Preserve

Pineapple can be used in a number of recipes. Flesh, pieces or juice, it is usable in many forms. In the international cuisine, pineapple is used as the main ingredient in many recipes. In fact these days I find many street vendors selling pineapple slices. This fruit can easily be converted into a snack with minimum ingredients. Apart from this pineapple can be used as pizza toppings, as a part of burgers, in the salad, tikka, pulao, etc. Let’s have a look at the ingredients required to make pineapple preserve:

Pineapple: Good pineapples make the best preserves (obviously)! Always pick ripened pineapple to make the preserve. The sweetness can be adjusted. I have chopped the pineapple because this is how I want it for the recipes. However, if you wish you can make the preserve with pineapple slices too.

Sugar: I have used 1 cup of sugar for 1 kg of pineapple chunks. The quantity of sugar totally depends upon the sweetness of pineapple and the desired sweetness of the preserve. So the same needs to be adjusted.

Flavoring: I have not added any flavor to my pineapple preserve. You can add spices such as cinnamon sticks, bay leaves, cloves etc or maybe even vanilla etc.

How to use pineapple preserve?

Here are a number of pineapple recipes you can make with the pineapple preserve. These are pineapple raita, pineapple halwa, pineapple kesari, etc.

How to make Pineapple Preserve?

1.This recipe makes approximately 1 and ½ kg pineapple preserve.

2.In a cooking pan add 1 kg pineapple chunks and 200 g sugar. While cutting the pineapple into chunks, grind the hard centre and cut the remaining pineapple. You can cut it in the desired size, small pieces or big chunks or full slices.

3.Cook it on a low flame till the sugar gets dissolved.

4.Once the sugar gets dissolved continue to cook on low flame for 10-12 minutes.

5.After 10-12 minutes add 1-2 drops of yellow food coloring. Mix well. This is totally optional.

6.Let the preserve come to room temperature. Thereafter store in a glass jar. If you want to increase the shelf life of pineapple preserve you can freeze it. Take out the desired quantity and bring it to the room temperature and use it.
