What is Rajma Recipe?

Rajma Recipe is a main course preparation of kidney beans in an onion, tomato, ginger, garlic gravy spiced with garam masala etc. It is a very popular pick from the Punjabi cuisine. It is a staple Sunday lunch in most Punjabi households. And why just Punjabi, Rajma is very popular all over North India. This particular recipe is a one pot recipe; there should be no reason for not eating Rajma when you crave for it.

Let’s talk about the ingredients for Rajma

Rajma calls for a nice gravy made with onions, tomatoes, garlic, ginger, green chilli and all the basic spices. There is a huge variety of kidney beans (Rajma) in the market. I like to use Chitra, that has white patches or jammu Rajma. It is very important that Rajma is properly cooked. No gravy can give life to under cooked Rajma.

Rajma is Amy’s (Amy is my 10 years old daughter) favorite. I make it in many ways. I have already shared restaurant style Rajma recipe. That day she had a stage show, she was performing Kathak. I had to (I was dying too) watch her show but I also wanted to make something special for her dinner. It was a very busy day and the evening was dedicated to Amy. So before leaving for her show, I prepared Rajma and rice for her.

The recipe asks for the good cooking time but it doesn’t ask for your interference. So things become manageable.

Saffron rice, whole wheat naan, sirke wala pyaaz, green chutney etc.

Ingredients for Rajma

1 cup kidney beans (Rajma), soaked for 8-10 hours

3 cups water

1 large onion, roughly chopped

3 medium tomatoes, roughly chopped

1 inch ginger, roughly chopped

7-8 garlic cloves

1 green chilli, roughly chopped

3 tbsp oil

1 tsp garam masala

Salt to taste

½ tsp turmeric powder

1 tsp red chilli powder

½ tsp dry mango (amchur) powder

2 tsp coriander powder

A pinch of baking soda

Handful of coriander

How to make Rajma Recipe

1. Grind together onion, tomatoes, ginger, garlic and green chilli

In a grinder add 1 onion, 3 tomatoes, 1 inch ginger, 7-8 garlic cloves and 1 chopped green chilli. Grind to make a fine puree.


2. Heat oil in a pressure cooker and add garam masala

Heat 3 tbsp oil. Add 1 tsp garam masala. And cook for 30 seconds.


3. Add puree and cook

Add the puree and cook and cook and cook. It will take its time. Let it cook till oil oozes out.


4. Add spices and cook

Add 1 tsp red chilli powder, ½ tsp turmeric powder, 2 tsp coriander powder and ½ tsp dry mango powder. Cook for 2-3 minutes.


5. Add kidney beans and pressure cook

Add 1 cup soaked kidney beans, salt to taste, a pinch of baking soda. Cook for 5-7 minutes.


6. Add water and pressure cook:

Add 2.5 – 3 cups of water. Close the lid of cooker. Pressure on high flame till 1 whistle. Thereafter pressure cook on low flame for 20-25 minutes or till Rajma is cooked i.e. soft.


7. Bon appétit

Serve Rajma with rice or chapatti.
