What is Rajma Recipe?

Rajma Recipe is a main course preparation of kidney beans in an onion, tomato, ginger, garlic gravy spiced with garam masala etc. Rajma Curry Recipe is one of the best north Indian recipes. This particular recipe is a one pot recipe.

Let’s talk about the Ingredients for Rajma

Rajma calls for a nice gravy made with onions, tomatoes, garlic, ginger, green chilli and all the basic spices. There is a huge variety of kidney beans (Rajma) in the market. I like to use Chitra, that has white patches or jammu Rajma. It is very important that Rajma is properly cooked. No gravy can give life to under cooked Rajma.The Rajma Curry Recipe asks for the good cooking time but it doesn’t ask for your interference. So things become manageable.

 

How To Make Rajma

1. In a grinder add 1 onion, 3 tomatoes, 1 inch ginger, 7-8 garlic cloves and 1 chopped green chilli. Grind to make a fine puree.

2. Heat 3 tbsp oil. Add 1 tsp garam masala. And cook for 30 seconds.

3. Add the puree and cook and cook and cook. It will take its time. Let it cook till oil oozes out.

4. Add 1 tsp red chilli powder, ½ tsp turmeric powder, 2 tsp coriander powder and ½ tsp dry mango powder. Cook for 2-3 minutes.

5. Add 1 cup soaked kidney beans, salt to taste, a pinch of baking soda. Cook for 5-7 minutes.

6. Add 2.5 – 3 cups of water. Close the lid of cooker. Pressure on high flame till 1 whistle. Thereafter pressure cook on low flame for 20-25 minutes or till Rajma is cooked i.e. soft.

7. Serve Rajma with rice or chapatti.
