What is Bharwa Baigan?

Brinjal or eggplants stuffed with a spice mix and cooked in a thick gravy of onion and tomatoes are bharwa baigan. Bharwa means stuffed and baigan is brinjal or eggplant. The eggplants are stuffed with basic spices. There are no special ingredients used to make bharwa baigan but it tastes absolutely delish. Here I have shared bharwa baigan recipe by my mother. This is how she makes bharwa baigan and these are absolutely flavorful. I do like this dish that I always make a little extra. And love to indulge in it for more than 1 meal. Bharwa baigan can be served with simple chapati and curd and even with parathas.

Ingredients and their substitutes for Bharwa Baigan Recipe

Eggplant/Brinjal: So when I started blogging I did not know if the two are the same or different and for the longest time and for no good reason at all, I believed that the long ones are eggplants and the round ones are brinjals. However, when I read more about the same I realized it is not about the vegetable rather it is about the place. The veggie is called brinjal in India and eggplant in America and other parts of the world. For this recipe use the smaller and young brinjals ( I love to call these brinjals, that is how I have known this since ever). Further, I have also added a handful of green chilies stuffed with the same spice mix.

Spices for the stuffing: The most basic spices have been used to stuff the brinjals.

Onion, tomatoes, and spices: The stuffed brinjals are cooked in the base of onion and tomatoes that is flavored with spices.
