What is Sindhi Dal Pakwaan?

A very popular Sindhi breakfast recipe- dal pakwaan! It comprises of deep fried bread, which is crisp as well as flaky, made of all-purpose flour and flavored with some carom seeds, called Pakwaan. Pakwaan is served with a combination of 2 dals, i.e. chana dal and yellow moong dal. Dals are tempered in a very different way, the interesting Sindhi mode of tempering dals. It is then topped with chopped onions and served with some fried chilies to make one of the most delightful meals.

Recipe of dal pakwaan consists of 2 recipes, one for dal and the other one for pakwaan. Further 2 dals are prepared; moong and chana. Nowadays for convenience, people often make only chana dal but I always serve pakwaan with both the dals. The taste of dals is very forgiving as in it is easy to manage it; the consistency is a bit tricky. And the trickiest part of dal pakwaan recipe is the perfect texture of Pakwaan. They should be crisp, flaky, and non-oily!! The most important ingredient for perfect Pakwaan is time and patience. Each pakwaan takes 3-4 minutes to cook. The best thing to do is to prepare Pakwaan(s) a day before you plan to indulge in heavenly Sindhi Dal Pakwaan.

How to make Dal Pakwaan

1. In a mixing bowl, add 1 and ½ cup all-purpose flour (maida), 1 and ¾ tbsp oil, ½ tsp carom seeds (ajwain) and salt to taste.

2. Mix with fingertips.

3. Add water gradually.

4. Make the semi-soft dough.

5. Leave it to rest for 10-15 minutes.

6. After 10-15 minutes, knead the dough once.

7. Take a portion of dough. Form a pedha.

8. Roll it thin as you roll a chapatti.

9. Make tiny cuts using a knife. Meanwhile, heat enough oil.

10. Put in medium hot oil. Fry on low flame.

11. Move or flip continuously or frequently to cook evenly.

12. Once pakwaan is golden brown take it out. It will darken once it cools.
