  • Vermicelli: I have used roasted vermicelli. Still I raosted them for a couple of minutes in ghee to enhance the flavours. I have used the regular vermicelli. You can use the finer one. However its quantity would vary.

Ingredients for Sevai kheer

  • 1 tbsp clarified butter (ghee)
  • 2 cloves (laung)
  • 1/2 cup vermicelli (sevai) (1 cup if using thin vermicelli)
  • 4 cups milk
  • 1/2 cup sugar or as per your taste
  • 1-2 tbsp almond slices
  • 1 tbsp raisins (kishmish)
  • handful of rose petals
  • 1 tsp cardamom (elaichi) powder
  • few saffron strands (kesar) (dissolved in warm milk)
  • 1 tbsp sliced pistachio (pista)
  • 1 tbsp chironji

How to make Sevai kheer


  1. Heat 1 tbsp ghee Sevai Kheer
  2. Add 2 cloves and let them turn aromatic (30 seconds on low flame)Sevai Kheer
  3. Add 1/2 cup broken sevai or vermicelli Sevai Kheer
  4. Stir and continuously roast, till sevai becomes turn light brownSevai Kheer
  5. Add 4 cups milk Sevai Kheer
  6. Simmer on low to medium flame. Stir occasionalySevai Kheer
  7. When vermicelli is soft and milk has thickened, add 1/2 cup sugar and mixSevai Kheer
  8. Add 1 tbsp chironjiSevai Kheer
  9. Add 1 tbsp sliced almonds, 1 tbsp raisins, 1 tbsp sliced pistachioSevai Kheer
  10. Check the seasoning and consistencySevai Kheer
  11. Add handful of rose petals Sevai Kheer
  12. Add 1 tsp cardamom powder and mix. Cook for 5 minutesSevai Kheer
  13. Add few saffron strands soaked in warm milk. Simmer for 5-7 minutesSevai Kheer
