What is samosa recipe?

Samosa recipe is the best thing human beings can ever eat!! I know an exaggerated statement but this is exactly how I feel. To define it in a more practical way it can be said that Samosa is a deep fried snack which has potato stuffing which is filled in all-purpose flour sheets and deep fried. It has a very crisp exterior and a spicy and tangy stuffing inside.

Let’s talk about the ingredients for samosa recipe

Generally samosa is made with a potato stuffing. The outer sheet is prepared using all purpose flour. In this recipe I am using a very simple potato stuffing. In fact it is a non fried stuffing. For the outer covering all purpose flour has been used. THis recipe doesn’t call for any special spices. We used to get such samosas in our schhool canteen… having said that, I feel like writing more about it, so lets do that in the next section. A good quantity of oil or ghee goes into it. Tight dough is prepared which ensures that samosas remain crisp even after coming to the room temperature.

Baba ki shop (my school canteen)

I did my schooling from St Mary’s Convent, Ajmer. Yeah, may be my framing of sentences doesn’t justify that, but that is the truth. Huge premises, big grounds!  There was a wing of primary section. Under the stairs of that building there was a small shop, with a window… our canteen – Baba ki shop. An old man with grey hair, dressed in a trouser and shirt (baba), riding his bi-cycle, would come before the recess time with a carton on the back side of his bi-cycle. The carton had samosas. World’s best samosas!

Mom would miss the alarm and I’ll be the happiest person… “No problem Mumma, give me 2 bucks, I’ll buy samosa from Baba ki shop”. When the birthday girl was bullied by her friends for a treat, she knew what to do… “Done then… come to Baba ki shop, in the recess for the treat”! When the school would be over, at times, feeling hungry without any hope in heart and money in pockets, we would just peep into baba ki shop… Baba samosa hai? (Baba do you have soamosa?) And if he’d say yes then we would borrow money from friends to eat samosa. The biggest disappointment would be… Arey yaar! Baba ki shop band hai! (Oh no! the canteen is close).

I tried to recreate that samosa. But you know what!! I couldn’t! Because it called for some ingredients; some ingredients which were beyond my pantry, beyond anybody’s pantry.

Ingredients for samosa recipe

For the coating

  1. 1 cup all purpose flour
  2. ¼ cup oil
  3. 1/2 -3/4 cup water
  4. 1 tsp carom seeds (ajwain)
  5. For the stuffing:
  6. 4 medium sized boiled potatoes
  7. Salt to taste
  8. 1 and ½ tsp red chilli powder
  9. 1 and ½ tsp dried mango powder
  10. ¼ tsp black pepper powder

Handful of chopped coriander

Handful of chopped mint leaves

Oil for frying

How to make samosa

1.  Prepare the dough

In a mixing bowl add two cups of all purpose flour. Add in salt to taste. Rub 1 teaspoon of carom seeds between your palms. Add them to the flour. Into this add 1/4 cup oil. Mix it properly. It will be crumbly. If you take a portion in your palm and bind it, it will hold the shape not fall apart. Gradually add 1/2 cup – 3/4 cup of water and prepare stiff dough. Cover the dough with a damp cloth and let it rest for some 15 to 20 minutes.


2. Prepare the stuffing

In a mixing bowl add 4 medium size boil potatoes. Add salt to taste, 1.5 teaspoon red chilli powder, 1.5 teaspoon dried mango powder, 1/4 teaspoon black pepper powder, handful of chopped mint leaves, and handful of chopped coriander leaves. Mix everything.


3. Prepare samosas

Once the dough has rested for 15 to 20 minutes punch it slightly. Divide the dough into portions. Make balls and roll them thin. Cut them diagonally, and shape it into a cone. Add potato stuffing. Apply some water on the edges. Fill it properly and seal it.


4. Fry samosas

Heat enough oil in a deep pan. Once the oil is hot, on a medium flame add samosas. Fry them on low flame till golden brown.


5. Bon appétit

Serve samosa with green chuntey and imli ki chutney and finish it with a cup of masala chai.

·         You may also add some fennel seeds.

·         Further for the dough, you may also use ghee instead of oil.
