What is Mix Veg?

Mix veg is the main course preparation prepared using assorted vegetables. It has crunchy bell peppers, juicy sweet corn kernels, lovely carrots, greens such as beans and peas and soft paneer. These vegetables are sauteed and cooked in a smooth and delightful tomato-onion based gravy having the richness of cashew and heavy cream. With the onset of winters, this recipe is a frequent preparation at my place. Do try this recipe as it is

Let’s talk about the Ingredients for Mix Veg

Mix veg calls for

Lots of fresh vegetables: In this recipe, you can easily play withHeat 1 tbsp oil  the vegetables, as per choice and availability. Bell peppers are however important as they impart their flavour which adds to the dish, making it more delectable. It is important to treat the vegetables properly. They should neither be chopped too small nor cooked too much. The vegetables should remain crunchy.
Gravy: Onion based gravy is used. For richness cashews and heavy cream has been added. Use broken cashews (kaju tudka) for gravy preparations as it costs less and tastes as good and is anyways ground to make gravy. I have used whole as I was out of the tudka ones. Homemade tomato puree has been used. It is very simple and easy to make and if you use tomato puree instead of grated tomatoes, you will definitely see the difference.

How To Make Mix Veg Sabji

1. Heat 1 tbsp oil

2. Shallow fry 1 cubed potato

3. Once potato is golden brown, add 4-5 cauliflower florets

4. Sprinkle salt and cover it with lid and cook for 2 minutes

5. Add 1 small chopped carrot and 8-10 french beans

6. Add 1/4 of green, red, yellow small bell peppers cut into cubes

7. Stir and cook for 2 minutes. The vegetables should be cooked but crunchy. Thereafter keep aside

8. To make the gravy: In a grinder jar and add 2 onions and 8-10 cashews (Kaju)

9. Make a smooth paste

10. Heat 2 tbsp oil

11. Add 1 tsp garam masala powder

mix veg

12. Add the paste of onion and cashew

mix veg

13. Cook till oil oozes

14. Add 1 tsp coriander powder, 1/2 tsp turmeric powder, 1 tsp red chili powder and mix well

15. Add 1 cup tomato puree and cook till oil oozes

mix veg

16. Add 2 tbsp fresh cream

mix veg

17. Mix very well and cook for 1 minute

18. Add fried vegetables and use a light hand to mix with gravy

19. Add 1 tbsp dried fenugreek leaves and salt to taste

20. Add 1/2 cup water, 1/4 cup paneer cubes, 1/4 cup boiled sweet corn kernels, 1/4 cup peas, and 1/4 cup boiled and sliced mushrooms

21. Cover with lid and cook for 2-3 minutes

22. Remove the lid and cook for 1 minute

23. Add 1 tbsp butter

24. Sprinkle 1 tsp pav bhaji masala

mix veg

25. Mix very well and check the consistency and seasoning

26. Bon Appetit: Garnish with some fresh cream and serve with paratha or instant butter naan
