Mediterranean Watermelon Salad | How to Make Mediterranean Watermelon

Mediterranean Watermelon Salad Recipe – Watermelon is my favourite fruit and all my life I have been eating it in the most monotonous manner i.e. by cutting, de-seeding and seasoning it with some rock salt. But then I thought of breaking that monotony and searched the internet for some recipes.

I stopped at the Mediterranean Watermelon Salad. Then stared at the word “Mediterranean” and presumed that it will be a complicated recipe. But when I read it, I found it was a simple recipe. And I was glad that I’ll be trying Mediterranean cuisine (believe me each time I write this word Mediterranean, I check if I have spelled it right or not). So trying this cuisine is a proud moment for me. Yeah am like that only… I feel proud easily and I get happy easily.

I really liked the combination of watermelon and mint. The sharpness of basil was balancing the flavours. Crunchy watermelon and cucumber and soft paneer!! This salad offers much more than I had expected.

I found this recipe here. Lots of customisation is possible with this recipe. You can include the vegetables of your choice such a bell peppers, olives, onion, tomatoes and so on. You can even play with the seasoning by adding cumin powder, black pepper, oregano, nuts, flax seeds etc.

How to Make Mediterranean Watermelon

1. In a bowl mix all the dressing ingredients i.e. 1 tbsp honey, 1 tbsp lemon juice, 1/2 tbsp olive oil and a pinch of salt.

2. In a large bowl mix all the salad ingredients i.e. 2 cups cubed and deseeded watermelon, 1/2 cup cubed cucumber, 1/4 cup crumbled paneer, 10-12 mint leaves and 5-6 basil leaves

3. Mix the dressing and salad. And serve.
