How to make Funfetti Cake at home?

Funfetti Cake is very easy and simple to make. And the best part is that it looks so gorgeous that it can easily make up for a birthday cake or a cake for celebrations. You do not have to be a pro to make this cake. The funfetti cake is absolutely moist and soft. Did I mention it is an eggless cake? Yes. Although the eggs have been replaced, you do not need any special ingredients to make this cake from scratch. And the result is absolutely perfect Funfetti cake.

Ingredients for Funfetti Cake

Flour: All-purpose flour has been used. You can use a combination of all-purpose flour and whole wheat flour, but the texture of the cake would definitely vary. It will not be as soft and moist.

Sugar: I have used granulated white sugar to make Funfetti cake. You can use a combination of white and brown sugar. Brown sugar makes the cake moister and helps it remain moist.

Oil: Flavorless oil is added. Instead, you can use melted butter. If using salted butter, do not use salt.

Baking powder and baking soda: These leavening agents are combined with yogurt and act as an egg replacer.

Vanilla Essence: The cake has been flavored with everyone’s favorite vanilla essence. I had essence therefore I have used the same. If you have vanilla extract, use that. However, you would need just a few drops of the same as it is very concentrated.

Sprinkles: Sprinkles are added in the cake as well as sprinkles are used to dress up the cake. You can use any of your choices. I like to use vermicelli sprinkles. Further I would suggest do not use large and too hard sprinkles. Use tiny ones. Also, make sure that the sprinkles you use do not bleed the color. Otherwise, you will end up messing up the color of your cake and frosting.

Butter Cream Frosting: Butter and icing sugar combined in the ratio of 1:4 makes one of the best frostings for cakes!  And the same has been used for this recipe.

1.This recipe makes two 6-inches cakes or one 9-inches cake.

2.Start off with greasing a 9-inch cake pan with oil and flour. Line it with a parchment paper.

3.In a large mixing bowl, take 1 cup of yogurt (dahi).

4.Add ¾ cup of granulated sugar.

5.Mix it using a whisk till the sugar is completely dissolved.

6.Whip in 1/3 cup of oil.

7.Also add in 1 tsp of vanilla essence.

8.Mix till everything is well incorporated.

9.Place a sieve on a mixing bowl. Into that add 1 and ½ cup of all-purpose flour (maida), ½ tsp baking soda and 1 and 1/8 tsp baking powder and ½ tsp salt.

10.Sift the dry ingredients twice or thrice.

11.Now add the dry ingredients to the wet ingredients in batches.

12.Add 2-3 tbsp of water.

13.Add approximately ¼ cup of sprinkles.

14.Fold in everything gently. Do not over mix.

15.Pour the batter in a 9-inch greased and lined cake pan.

16.Bake at 180°C (160°C in case of convection or fan oven) for 30-40 minutes.

17.Check by inserting a toothpick. It should come out clean.

18.Let the cake cool down a little. Thereafter demould it. Refrigerate it till it is cold and firm.

19.To make the butter cream frosting: In a mixing bowl add ½ cup of butter at room temperature. Beat it till it is light in color and pale.

20.Next add icing sugar in batches and mix at the lowest possible speed.

21.Add ½ tsp vanilla essence too.

22.Add in 1-2 tbsp of milk if required.

23.Beat everything well for 8-10 minutes on high speed till the frosting gets absolutely creamy and light.

24.Cover the cake with the butter cream frosting.

25.Decorate it with sprinkles as you may like.

26.Remove the extra sprinkles.

27.Serve. Bon appetite!
