Cheesy Veg Disc Recipe | How to make cheesy vegetable disc?

What is cheesy veg disc?

An eye-catching preparation which has crispy bread, crunchy vegetables and melt in mouth cheese is cheesy veg disc. These are hit among-st the kids. Even adults relish this lot and therefore I often make it as a party appetizer. This preparation can easily be customized as per the taste and availability of ingredients.

Let’s talk about the ingredients:

Bread: Use any bread of your choice. This recipe is perfect with any bread. I prepared cheesy disc using multigrain bread too and it was great. Shaping the bread is one of the important steps of this recipe. The steps have been explained in the recipe part. Do not discard the leftover bread. Instead use it to make instant bread crumbs, bread poha, etc.

Cheese: I have used the regular processed cheese which is easily available. You can also use cheddar or mozzarella. What is important is to add chopped cheese along with grated cheese to the stuffing. Chopped cheese gives a very nice bite to the discs and grated cheese gives a binding to the stuffing.

Vegetables: Bell peppers, onions, sweet corn kernels, are my choice of this recipe. You can also add in tomatoes, mushrooms, cottage cheese (paneer), etc. I did not cook the vegetable and therefore these had a nice bite and crunch.

Seasoning: Butter has been seasoned with little Italian seasoning and chili flakes. And the stuffing has been seasoned with tomato ketchup.

These discs need no accompaniment. Just serve with a glass of chilled lemon iced tea as evening refreshments.

How to make Cheesy Vegetable Disc?

1.This recipe makes 12 cheesy veg discs.

2.Make herbed butter. For that take ¼ cup butter at room and add ½ tsp Italian seasoning and ¼ tsp red chili flakes. Mix well and keep aside.

3.Next prepare the stuffing. In a mixing bowl add ½ cup boiled sweet corn kernels, 1/3 cup chopped bell peppers, 1/3 cup chopped onions, 1/3 cup chopped processed cheese, 2 tbsp grated processed cheese and 1 tbsp tomato ketchup. No salt needs to be added. Mix everything and refrigerate.

4.Shape the bread slices. For that place two bread slices on a chopping board. Use a bowl and cut out roundels from both the slices.

5.Keep one roundel aside. This is the base. Place another roundel on the board and use a smaller bowl and cut a smaller roundel. From the second cutting we will use only the ring, not the roundel. Make sure that the ring is not thin. It should be broad enough.

Tips:I use the lids of my loose tea and sugar containers. Works perfect for me.

6.Spread herbed butter on the base.

7.Put the ring on it. It now looks like a disc.

8.Fill the disc cavity with approximately 2 tbsp of stuffing.

9.Heat a pan or skillet. Remove the ring of the discs. Cook the base on low flame.

10.Cover and cook for 2 minutes and thereafter remove the cover and cook till crisp.

11.Apply butter on the rings.

12.Cook them separately till crisp.

13.Place the rings on the cooked base.

14.Serve hot. Bon appétit!
