What is Aloo Palak Gravy?

Potatoes cooked in delightful spinach gravy is aloo palak. In this recipe, spiced baby potatoes have been cooked in rich and creamy spinach gravy. This is absolutely different from the aloo palak ki sabzi which is a dry preparation. In fact, it is different from the regular aloo palak gravy recipes too. In this recipe, I have used baby potatoes instead of diced potatoes, which I had fried in some spices. It gives a chick look to the dish. Let’s talk about the ingredients for Aloo Palak Gravy

As I mentioned, the aloo part has been performed by baby potatoes. Actually, I was planning to make some kofta and serve them in spinach gravy. But I fall short of time and just fried few baby potatoes and added them to the gravy. And it was magic. The combination was perfect and the presentation of the dish changed drastically, making it a party recipe.

For the gravy, it is important to use good spinach. Choose green spinach with small leaves. To blanch it I simply added to a pot with little sugar and salt WITHOUT ANY WATER and then transferred to ice cold water. This helps to retain the nutrients as well as the color of spinach. Thereafter it was cooked in flavourful onion tomato gravy and finished with some cream.

To Blanch Spinach

1. In a pan add spinach leaves from 1 bunch, ½ tsp sugar and ¼ tsp salt

2. Cover and let it simmer for 10 minutes. NO NEED TO ADD WATER

3. Spinach releases its water and leaves be soft

4. Transfer spinach leaves in ice cold water. Leave for 3-4 minutes. Take out and keep aside

To Make Fried Baby Potatoes

1. Heat 1 tbsp oil

2. Add 1 tsp cumin seeds (jeera)

3. Add spices i.e. 1 tsp red chili powder, 1 tsp chaat masala powder, and ¼ tsp turmeric powder

4. Sauté for 30 seconds

5. Add 8-10 boiled baby potatoes

6. Add salt to taste

7. Cook for 5-7 minutes and keep aside

To Make Aloo Palak Gravy

1. Heat 1 tbsp oil

2. Add 2 tbsp butter

aloo palak gravy

3. Add ½ tsp cumin seeds (jeera)

4. Once they splutter add 1 tsp red chili powder, ¼ tsp turmeric powder and 2 tsp dry fenugreek leaves (kasuri methi)

5. Cook for 30 seconds

6. Add 2 medium sized sliced onions

7. Cook till soft

8. Add 1 tbsp ginger garlic paste

9. Add 3 medium sized chopped tomatoes

10. Cook till soft

11. Add blanched spinach

aloo palak gravy

12. Cook for 5-6 minutes

13. Let the mixture cool down, transfer to grinder jar

14. Add 8-10 black peppercorns (sabut kali mirch)

15. Make smooth puree

16. Heat 1 tbsp oil

17. Add spinach puree

aloo palak gravy

18. Cook for 8-10 minutes

19. Add salt to taste

aloo palak gravy

20. Check seasoning and consistency

21. Add 2 tbsp heavy cream

aloo palak gravy

22. Add fried baby potatoes and simmer for 5-7 minutes

23. Bon Appétit: Serve aloo palak with whole wheat naan or jeera rice
